This high-protein flour (also known as “hi-gluten” or “strong” bread flour) is ideal for bagels, pan breads and focaccia, or for blending with lower-protein flour to add strength to sourdough and artisan breads
Gluten flour, added to other flours in bread recipes, gives the dough extra elasticity and protein, resulting in a finer quality bread. When using gluten flour for this purpose use 1 Tbsp or less per cup of other flou
